I remember back in the day when Karen Peck sang with The Rex Nelon Singers. I loved that group back then, and today I love Karen Peck and New River just the same! Karen is just a beautiful person, inside and out. She’s an example of a true Christian. I always enjoy catching up with her. I hope you try her delicious recipe. It’s sure to be a favorite!

“This is one of my favorite dishes. My friend, Anita, from Tennessee, gave me this recipe so I always call it Anita’s Chicken Casserole.”
ANITA’S CHICKEN CASSEROLE
Four boneless breasts (cooked and cubed)
1 can cream of chicken soup
1 can cream of mushroom soup
1 pkg slivered almonds
8 oz sour cream
1 stick butter (melted)
1 pack Town House crackers (crumbled)
In a large bowl mix cooked chicken, cream of chicken and mushroom soup, slivered almonds and sour cream all together and pour into greased casserole dish. Crumble crackers over the top and drizzle the melted butter over the crackers. Bake at 350 degrees for 25-30 minutes.
